Sauteed Zucchini

Yield: 12 Servings

Ingredients

  • 16 thin zucchini
  • 2 tablespoons butter
  • Salt and freshly ground pepper

Instructions

1. With a paring knife, cut each zucchini into thirds, lengthwise. Trim each zucchini into a rectangle with sharp edges, and then trim the corners to form octagonal or rounded corners.

2. Melt the butter in a large skillet over medium-high heat. Sauté the zucchini until golden brown. Season with salt and pepper to taste and serve.
